In retrospect, I seriously wish I had thoroughly pondered this critical question before ordering a plate of Chipotle Pasta at the pre-race dinner on Friday night. Being in Utah, I assumed any spice would be metered out so thoughtfully as not to destroy the taste buds of the very homogenously white population. The Fateful Plate In one bite, I found out I had completely misjudged the palate of Utahans. I was able to stomach it by swallowing individual pieces of pasta whole with lots of water, beer, and bread to wash it down. The strong spices irritated my stomach the night before the race and my internals still felt touch-and-go the morning of the race. We arrived at the starting line in Hatch, UT at 4:20 in the morning.
